Mt. Defiance likes to do things a little differently. Their Amber Rum is distilled from Panela, unrefined whole cane sugar made by boiling and evaporating sugarcane juice, from Columbia. It combines the very best features of molasses and fresh cane juice. Mt. Defiance ages their Amber Rum in used rye whiskey barrels, adding a touch of caramelized sugar to the craft rum before bottling. Notes of sweet vanilla, toffee and honey make this bottle delectable. But it's the hint of pineapple that makes it truly extraordinary.
